Upland Hospitality Opens Second Champagne Velvet Restaurant Concept in Castle Rock
CV Proper Kitchen & Bar hosts soft opening diners today through Saturday, with grand opening May 17
Castle Rock, CO (May 14, 2026) – Upland Hospitality, Upland Brewing Company’s restaurant arm, is excited to announce the opening of CV Proper Kitchen & Bar, its second concept based on the company’s Champagne Velvet beer.
CV Proper Kitchen & Bar, a French-inspired bistro celebrating the legendary Champagne Velvet beer brand, will be hosting select guests for soft openings today through Saturday, May 16 before officially opening its doors at 11 a.m. on Sunday, May 17 at 2355 Mercantile St, Castle Rock, CO 80109. The restaurant marks a new chapter for the historic Champagne Velvet brand, which has been honoring craft brewing tradition since 1902.

We've created a space where Champagne Velvet's 120-year legacy meets elevated American cuisine with French bistro techniques.”
The 3,778-square-foot restaurant can accommodate up to 174 guests and has a team of approximately 20 staff members dedicated to providing exceptional service. Under the leadership of General Manager Sara Cash, CV Proper Kitchen & Bar will feature an elevated American menu with French-inspired influences, showcasing fresh ingredients and artisan quality. The menu includes elevated dishes and signature items like Prince Edward Island Mussels, Chicken Liver Pâté, pan-seared duck, premium cuts including a 6 oz Petite Filet, 1902 Burger with white cheddar cheese and pork belly, and Salmon Niçoise salad, with desserts including Indiana's beloved Sugar Cream Pie.
Champagne Velvet is featured on tap alongside a curated selection of craft beers, including rotating local favorites. The beverage program also includes an extensive list of handcrafted cocktails, a carefully selected wine list and premium spirits.
The restaurant's interior reflects the sophisticated yet welcoming spirit of the Champagne Velvet brand, with the bar serving as a stunning focal point, dramatic midnight blue walls, vintage-inspired table lamps, plush tufted banquettes and mid-century modern seating.
CV Proper Kitchen & Bar is ideal for intimate dinners, celebrations or drinks at the bar.
This is Upland Hospitality’s second restaurant in Colorado. CV Taphouse & Kitchen, another Champagne Velvet branded restaurant, opened in late 2025.
