Upland Hospitality Brings Champagne Velvet Restaurant Concepts to Colorado with Two New Locations

CV Tap House & Kitchen Now Open; CV Proper Kitchen & Bar Set for Spring 2026 Debut 

Centennial, CO – Upland Hospitality, Upland Brewing Company’s restaurant arm, is excited to announce its strategic expansion into Colorado with two new restaurant concepts based on the company’s Champagne Velvet beer. These two restaurants mark Upland's first locations outside of Indiana. CV Tap House & Kitchen celebrated its soft opening last month, following thoughtful renovations, while CV Proper Kitchen & Bar is scheduled to open in Spring 2026. 

Upland Hospitality recently acquired these two locations in Colorado as part of a strategic expansion that serves dual purposes: enhancing distribution capabilities in the region while establishing a strong operational foundation for future growth.

Over the next year, both Colorado locations will undergo comprehensive rebranding to become Champagne Velvet restaurants, introducing a new concept to the Upland Hospitality portfolio. The transformation will maintain continuity of service while elevating the dining experience to match Upland Hospitality's signature standards. 

 

CV Tap House & Kitchen – Now Welcoming Guests 

CV Tap House & Kitchen, located at 6460 S Syracuse Way in Centennial, is a vibrant gathering place where exceptional food meets an impressive selection of craft beers, cocktails and local favorites. The 3,500-square-foot restaurant accommodates 145 guests and features a team of 27 staff members dedicated to providing memorable dining experiences. The refreshed space has been thoughtfully designed to welcome both regulars and new faces, offering a warm and inviting atmosphere that reflects Upland Hospitality's commitment to creating community-centered dining experiences. 

Sara Cash currently serves as Acting General Manager of CV Tap House & Kitchen and will transition to lead CV Proper Kitchen & Bar upon its opening in Spring 2026. 

 

CV Proper Kitchen & Bar – Opening Spring 2026 

The upcoming CV Proper Kitchen & Bar, located at 2355 Mercantile St in Castle Rock, will introduce an elevated dining concept to the Colorado market. The 3,778-square-foot restaurant will accommodate 174 guests and feature anticipated hours of 11 AM to 10 PM, with a team of approximately 20 staff members dedicated to providing exceptional service. 

Under the leadership of General Manager Sara Cash, CV Proper Kitchen & Bar will feature an elevated American menu with French-inspired influences, showcasing fresh ingredients and artisan quality. The menu includes sophisticated shareables like Black Bear Bay Mussels & Fries, Chicken Liver Pate and Pork Belly Bites. Entrées range from pan-seared duck to premium cuts including a 12 oz T-Bone and a 6 oz Petite Filet. Signature items include the CV Burger with black truffle aioli, brie and caramelized onions, and a thoughtfully curated selection of salads including Roasted Beet Salad and Salmon Niçoise. The dessert program features classic favorites like Red Velvet Cake and Indiana's beloved Sugar Cream Pie. The beverage program will include an impressive craft beer selection, curated cocktails and wine offerings.
